Elderberry: A High Desert Forager's Guide
As a forager, I am always looking for wild edibles or medicinal plants when I am out walking. It's like a switch I can't turn off. I remember a very specific instance where I wasn't on a search for anything in particular, just getting some exercise, and I came across an entire forest of elderberries deep in a mountain canyon. Every direction I looked were really tall elderberry shrubs. Talk about hitting the jackpot! And at my feet the ground was carpeted in Oregon grape (I'll have a mini monograph about this one later in the summer). Luckily, I had my foraging knife and bag in my pack to harvest both plants. Unfortunately, I was too late for the flowers, making a cordial is lovely, but I was very much on time for the berries. It was a forager's dream, so many berries I didn't have to worry even once about picking too many.

Where Elderberries Grow
If you've hit that jackpot in a mountain canyon, chances are you've met Sambucus nigra ssp. cerulea, better known as Blue Elderberry. It's the elder of the American West, and it's a lot tougher than its delicate white flower clusters let on. You'll find it hugging stream banks, river banks, and open riparian areas, thriving on moist, well-drained, sunny sites from around 1,000 feet up to 9,000 feet in elevation. It's just as happy tucked into a shady canyon bottom as it is scrambling up a sagebrush slope, which is part of why it shows up in so many different pockets of our high desert terrain.
Geographically, Blue Elderberry's range stretches from southern British Columbia and western Alberta down through California, Arizona, and New Mexico, reaching east into Montana and Colorado. So if you're canyon-hopping anywhere in the Intermountain West, odds are good there's a stand of elderberry somewhere along your route. You'll know you've found it by the flat-topped clusters of creamy white flowers in early summer, followed by the deep blue-black berries dusted with that pale, waxy bloom, almost like they've been lightly powdered with flour.
Zoom out to the rest of the world and the elder family gets even bigger. Sambucus nigra, the European black elder, is native across most of Europe and as far east as Turkey, and it's the species behind centuries of European elderflower cordial and elderberry wine. Here in North America, American elder grows wild east of the Rockies, while red elderberry is native across a huge swath of the U.S. and Canada (though its berries need special handling, since red elderberry is more toxic than its blue and black cousins). Different corners of the globe, same tree of music, same instinct in people everywhere to gather it up before the cold sets in.
A Short History of Use
Elderberry's relationship with people goes back long before anyone thought to call it medicine. Across North America, Indigenous peoples were the first to gather, tend, and rely on elderberry, and that relationship never really stopped. Blue Elderberry stands were actively managed with fire to keep them productive, and nearly every part of the plant found a use: berries dried for winter storage and later cooked into sauces, flowers steeped into fever teas or used in sweat baths, and the hollow stems hollowed further into flutes, pipes, and arrow shafts, which is part of why elder earned the nickname "the tree of music" in more than one tradition.
Across the Atlantic, Sambucus nigra carved out an equally deep place in European life. Elder shows up in old folk belief as something close to sacred, a tree you didn't cut or burn without asking its permission first, and its flowers and berries became staples of the European kitchen and medicine cabinet alike, from elderflower cordial to elderberry wine to syrups steeped for the first sniffle of the season. That folk reputation eventually made its way into formal medicine. Elderflower is recorded in both the European and British Pharmacopoeias, and it appears in Germany's Commission E Monographs specifically for its use against the common cold.
What's struck me most in reading through the history is how consistent the story is no matter where you look. Whether it's a Blue Elderberry stand in a Utah canyon or a black elder hedgerow in the English countryside, people kept reaching for the same plant for the same reasons: to get through cold season, to heal a wound, to mark the turn toward autumn. That kind of staying power across cultures that never spoke to each other is usually a good sign there's something real behind the folklore, which is exactly what modern research has started to confirm.
Medicinal Uses
Elderberry's reputation as a cold-and-flu remedy isn't just folklore that stuck around out of habit. It's one of the most researched medicinal plants in the herbal world, and a fair amount of that folk wisdom is holding up under modern study. The berries and flowers are rich in anthocyanins, the same deep purple-red pigments that give the berries their color, and these compounds are believed to be behind much of elderberry's antioxidant, anti-inflammatory, and antimicrobial activity. Elderberry preparations have shown promise in research for reducing the severity and duration of flu symptoms, and elderflower extracts have been studied for antiviral and immune-modulating effects as well.
Traditionally, the berries have been used as a general immune tonic, particularly at the first sign of a cold, taken as a syrup, tea, or tincture. The flowers carry their own traditional uses, more often turned to for reducing fever and inflammation and for their mild diuretic effect. Historically, elder has also been used for coughs, sore throats, sinus congestion, and even minor aches and pains, whether taken internally as a tea or applied topically as a wash or poultice.
One important note before you reach for a handful of berries straight off the umbel: raw and unripe elderberries, along with the stems, leaves, and seeds, contain compounds that can cause nausea and gastrointestinal upset. This goes for both the blue elderberries common here in the Intermountain West and the black elderberries of Europe. The fix is simple. Cooking the berries (or thoroughly drying them) neutralizes those compounds, which is exactly why every traditional elderberry preparation, from syrup to wine to tincture, involves heat, alcohol, or time rather than eating them fresh off the stem.

Harvesting & Preserving
Timing is everything with elderberries. You're not looking for the flower stage here (that's a different harvest, for a different project like cordial), you're waiting for the whole flower head, or umbel, to ripen into a cluster of fruit. Ripe berries are black or deep blue-black, with that telltale dusty white coating across the skin, almost identical to the bloom you'd see on a ripe juniper berry. Snip the entire umbel off the shrub rather than picking berries one at a time. It's faster, it's easier on the plant, and it saves your fingers from what is genuinely a permanent purple stain if you try to pick individually.
Once you're home with a bag full of umbels, you've got two solid paths for getting the berries off the stems, and both start with the same trick: freezing makes destemming dramatically easier.
If you're planning to freeze your harvest, lay the whole umbels on a baking sheet and pop them in the freezer until solid, usually just a few hours. Once frozen, the berries will practically fall off the stems with a gentle shake or roll between your hands. The key here is speed. Get the berries separated from the stems and into a sealed container or ziplock bag quickly, then back into the freezer if you're not using them right away so they don't defrost and turn to mush.
The other route, and the one I lean on for long-term storage, is drying the berries while they're still on the stem. Lay the whole umbels out on screens or trays somewhere warm and dry with good airflow, and let them dry naturally until the berries are hard and brittle, not sticky or tacky anywhere. Once they're fully dry, the stems slide right off with barely any effort, none of the mess or staining you get working with fresh fruit. I prefer this method for anything I'm storing for the long haul, since it doesn't rely on a freezer running, which matters if the power ever goes out for an extended stretch. Store the finished dried berries in an airtight jar somewhere cool and dark, and they'll hold their potency for up to a year.
Either way, don't skip removing stems and leaves from your final product. They carry a higher concentration of the same compounds that make raw berries hard on the stomach, so a clean destem job means a safer, better-tasting syrup, tea, or tincture down the line.
Culinary Uses
If elderberry's medicine chest reputation is about the immune system, its kitchen reputation is about turning a foraged windfall into something you'll actually look forward to opening. Syrup is the classic starting point and probably the most versatile of the bunch. Simmer the berries down with water, strain out the solids, and reduce the liquid with sugar or honey until it's thick enough to drizzle. From there it's equally at home stirred into a cocktail, poured over pancakes, or swirled into sparkling water, no cold-and-flu justification required.
Jam is where elderberry gets a little more old-world. Elderberries are naturally low in pectin, so traditional recipes often pair them with something pectin-rich, apples being the classic choice, or lean on a generous ratio of sugar and a splash of lemon juice to help the set along. The result lands somewhere between blueberry and huckleberry in flavor, earthy and a little tart, and it holds its own on a cheese board as easily as it does on toast.
Then there's wine, which might be elderberry's oldest culinary claim to fame. It's been called the "Englishman's grape" for its long history as a substitute (or stealth addition) to grape wine, prized for the deep color and rich tannin it lends. Elderberry wine has a reputation for needing patience. It's often thin and unremarkable young, but given a year or more to age, it develops into something genuinely complex. If you've got a big enough harvest to set some berries aside for a batch, it's worth the wait.
Between syrup, jam, and wine, a single good afternoon in the canyon can turn into a pantry's worth of ways to carry summer into the colder months ahead.
